Grilled Citrus Shrimp Skewers
Bright, zesty, and slightly smoky, these grilled citrus shrimp skewers are packed with fresh flavors. The combination of citrus, garlic, and herbs makes them a perfect pairing for a crisp Sauvignon Blanc.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- Zest and juice of 1 orange
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 2 cloves garlic, minced
- 1 tbsp honey
- 1 tsp Dijon mustard
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh cilantro or parsley, chopped
- Wooden or metal skewers
Instructions:
- Prepare the Marinade:
- In a bowl, whisk together olive oil, orange zest and juice, lemon zest and juice, lime zest and juice, garlic, honey, Dijon mustard, smoked paprika, salt, and black pepper.
- Marinate the Shrimp:
- Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes (do not marinate for too long, or the citrus will start to “cook” the shrimp).
- Prepare the Skewers:
- If using wooden skewers, soak them in water for 15–20 minutes to prevent burning.
- Thread the marinated shrimp onto the skewers, leaving a little space between each piece.
- Grill the Shrimp:
- Preheat the grill or a grill pan to medium-high heat.
- Grill the shrimp skewers for 2-3 minutes per side, until they turn pink and slightly charred.
- Finish & Serve:
- Remove from the grill and sprinkle with fresh chopped cilantro or parsley.
- Serve immediately with extra lemon wedges.
